Oat bran pancakes are nutritious pancakes packed with fibre and protein with a delicious nutty flavour. Pancakes made with oat bran are simple and easy, with just 4 healthy ingredients, and can be gluten free and dairy free.

Ingredients

Oat bran is the outer husk of the oat grain which has been milled to a fine texture. It's available in supermarkets and health stores. If you are sensitive to gluten, use certified gluten free oat bran which has been processed separately from other grains.

Egg adds structure to the pancakes. I haven't tried making oat bran pancakes with an egg replacer, if you do, let me know how you get on in the comments.
Milk - use whichever type of milk you prefer, dairy or non dairy, full fat or skimmed.
Baking powder makes oat bran pancakes a little fluffier.
You'll also need a drizzle of cooking oil for frying.
How to make oat bran pancakes
Add the oat bran, egg, milk and baking powder to a blender and blitz until thick and creamy.

Heat a frying pan or pancake pan over a medium heat. Add a drizzle of cooking oil.
Add tablespoonfuls of the batter to the pan, allowing enough space so that the pancakes don't run together. You'll need to cook the pancakes in 2 batches.

Cook for a couple of minutes until the top of the pancakes starts dry out, then flip them over. Cook for a couple of minutes on the other side until golden in colour.
Repeat with the remaining mixture.

Making pancakes without a blender
If you prefer you can make oat bran pancakes without a blender. Add the oat bran to a bowl and make a well in the centre. Crack the egg into the well and using a whisk, gradually incorporate the oat bran into the egg.
Gradually add the milk, whisking until you have a smooth batter.
Recipe tips
- If you prefer, you can make large thin pancakes. You'll need a thinner batter, so add an extra 75ml of milk.
- You can also add extra flavours to the mix, such as a quarter teaspoon of cinnamon powder, or vanilla extract.
Healthy pancake topping ideas
There are plenty of options for delicious pancake toppings which are still healthy! Try one of these quick and easy sauces, or keep things simple with fruit and yogurt and a sprinkling of nuts or seeds.
For a savoury option, top your oat bran pancakes with poached eggs on spinach, or smoked salmon and cottage cheese.

Oat Bran Pancakes
Equipment
- Blender or mixing bowl
Ingredients
- 100 g oat bran gluten free if needed
- 1 egg
- 100 ml milk dairy or non dairy
- ½ teaspoon baking powder
- oil for frying
Instructions
- Add the oat bran, milk, egg and baking powder to a blender and blitz until thick and creamy.
- Heat a non stick frying pan or pancake pan over a medium heat. Add a splash of oil and tip the pan to spread the oil.
- Add tablespoons of oat bran batter to the pan. Ensure the pancakes are spread out enough that they don't join together. You'll need to cook the pancakes in 2 batches.
- After a couple of minutes, the tops of the pancakes will start to dry out. Flip the pancakes and cook until golden on the other side.
- Repeat with the remaining batter.
Notes
- You'll get 6 to 8 pancakes from this quantity of batter. They'll serve 2-3 people depending on how hungry you are.
- If you prefer you can make the pancakes in a bowl. Add the oat bran and make a well in the middle. Break the egg into the well and gradually whisk into the oat bran. Gradually add the milk, whisking until smooth.
- If you'd prefer to make large thin oat bran pancakes, add an additional 75ml of milk. The batter should be the consistency of single cream.
