Oat Bran Pancakes

Oat bran pancakes are nutritious pancakes packed with fibre and protein with a delicious nutty flavour. Pancakes made with oat bran are simple and easy, with just 4 healthy ingredients, and can be gluten free and dairy free.

Ingredients
 
 

  • 100 g oat bran gluten free if needed
  • 1 egg
  • 100 ml milk dairy or non dairy
  • ½ teaspoon baking powder
  • oil for frying

Instructions
 

  • Add the oat bran, milk, egg and baking powder to a blender and blitz until thick and creamy.
  • Heat a non stick frying pan or pancake pan over a medium heat. Add a splash of oil and tip the pan to spread the oil.
  • Add tablespoons of oat bran batter to the pan. Ensure the pancakes are spread out enough that they don't join together. You'll need to cook the pancakes in 2 batches.
  • After a couple of minutes, the tops of the pancakes will start to dry out. Flip the pancakes and cook until golden on the other side.
  • Repeat with the remaining batter.

Notes

  • You'll get 6 to 8 pancakes from this quantity of batter. They'll serve 2-3 people depending on how hungry you are.
  • If you prefer you can make the pancakes in a bowl. Add the oat bran and make a well in the middle. Break the egg into the well and gradually whisk into the oat bran. Gradually add the milk, whisking until smooth.
  • If you'd prefer to make large thin oat bran pancakes, add an additional 75ml of milk. The batter should be the consistency of single cream.
