Oat bran pancakes are nutritious pancakes packed with fibre and protein with a delicious nutty flavour. Pancakes made with oat bran are simple and easy, with just 4 healthy ingredients, and can be gluten free and dairy free.
Add the oat bran, milk, egg and baking powder to a blender and blitz until thick and creamy.
Heat a non stick frying pan or pancake pan over a medium heat. Add a splash of oil and tip the pan to spread the oil.
Add tablespoons of oat bran batter to the pan. Ensure the pancakes are spread out enough that they don't join together. You'll need to cook the pancakes in 2 batches.
After a couple of minutes, the tops of the pancakes will start to dry out. Flip the pancakes and cook until golden on the other side.
Repeat with the remaining batter.
Notes
You'll get 6 to 8 pancakes from this quantity of batter. They'll serve 2-3 people depending on how hungry you are.
If you prefer you can make the pancakes in a bowl. Add the oat bran and make a well in the middle. Break the egg into the well and gradually whisk into the oat bran. Gradually add the milk, whisking until smooth.
If you'd prefer to make large thin oat bran pancakes, add an additional 75ml of milk. The batter should be the consistency of single cream.
