Easy Blackberry Sauce

This easy blackberry sauce takes just minutes to make, and is a healthy topping for pancakes, ice cream, cheesecake and other puddings, as well as savoury recipes. Make this fruit sauce with fresh blackberries or use frozen fruit - no need to defrost!

Homemade blackberry sauce is an ideal way to add extra fruit and flavour to your dessert or breakfast.

Blackberries are also a good complement to rich meats and blackberry sauce with duck is delicious.

Like most berries, blackberries are very nutritious. They are packed with fibre, and high in vitamin C. They are also low in carb, calories and fat.

This healthy low sugar sauce is sweetened with just a little honey and thickened with chia seed.

Ingredients

There's just 4 ingredients for this quick fruit sauce recipe, and one of those is optional!

Ingredients for blackberry sauce

Blackberries. You can use fresh or frozen fruit. I used wild blackberries (brambles) but you can also use cultivated blackberries which tend to be a lot larger.

Most supermarkets now sell frozen blackberries throughout the year.

Honey. As blackberries are quite tart, there's a little honey in the recipe to balance the flavour. If you prefer, you could use sugar or maple syrup. Adjust the sweetness to suit your taste. If your blackberries are quite sweet, you may not need any sweetener at all.

Lemon juice. You don't need to add lemon juice to blackberry sauce but a small amount will enhance the blackberry flavour.

Chia seed. This is the magic ingredient which will thicken the sauce without cornstarch. Chia seeds are so easy to use. You can add them to hot or cold liquids, and they'll thicken up in just 5 minutes.

And as blackberries are packed with seeds anyway, you won't even notice the texture of them in this healthy sauce.

Chia seeds are also very nutritious. They are a good source of omega-3, B vitamins, key minerals and fibre.

Chia seed can also be used to make a quick jam or these healthy chia flapjacks.

How to make easy blackberry sauce

Put the blackberries and 2 tablespoons of water in a saucepan, and place over a medium heat. Cook for 5 minutes until the juices start to run.

If you're using frozen fruit, you might need to cook the blackberries for a couple of minutes extra.

Remove from the heat and add the lemon juice, honey and chia seed. Stir well.

The chia seeds will thicken the sauce in about 5 minutes.

If you want a slightly thicker sauce, add a little more chia seed, but make sure you have allowed the sauce to thicken before you add extra.

You can also lightly mash some of the fruit if you like.

Serving and storage

This healthy blackberry sauce is delicious with some of these breakfast recipes. These healthy oatmeal crepes and blackberry sauce go very well together!

It is also delicious served over yogurt or ice cream. Or drizzle it over dessert such as this delicious low fat lemon cheesecake.

Tart fruit sauces such as cherry, orange and blackberry are also often served with rich meats and fish. This easy blackberry sauce goes well with pork and game such as duck and venison.

You could also add a splash of red wine or blackberry liqueur to the recipe if you are planning to serve it as a savoury sauce.

The sauce can be stored in the fridge for 3 or 4 days. You can also freeze blackberry sauce.

What can I do with too many blackberries?

One of the best ways of storing blackberries is to freeze them. Open freeze them on a tray and then store in an airtight bag or container. Blackberries will also store well in the fridge for 3 or 4 days. Place them in an open container in the salad drawer. They are then perfect for adding to crumbles, muffins and sauces. Blackberries are also delicious in smoothies, or you could make stewed blackberries with apple.

Why are my blackberries so sour?

Blackberries are naturally slightly tart. However, if they are really sour, it may be that they have not fully ripened. If you are picking them yourself, make sure that they have fully ripened on the bush. They should be a dark inky purple, without any red patches. Blackberries will not continue to ripen once they have been picked.

Are blackberries healthy?

Yes, along with other berries, blackberries are one of the healthiest fruits you can choose. Their dark purple colour means they are rich in anthocyanins, a powerful antioxidant. Blackberry seeds are also very healthy, as they are a source of omega 3, so try to keep the seeds in the blackberries when you use them in cooking.

Equipment

Ingredients
  

  • 250 g blackberries fresh or frozen
  • 2 tablespoon water
  • 2 teaspoon honey or sugar or maple syrup
  • 1 tablespoon chia seed
  • squeeze lemon juice

Instructions
 

  • Add the blackberries and 2 tablespoons of water to a pan and place on a medium heat. Cook gently for 5 minutes until the juices are running. (If you are using frozen fruit, you may need a minute or two longer.)
  • Remove from the heat. Stir in the honey, lemon juice and chia seed. Leave to thicken for 5 minutes. If you want, you can lightly mash the berries.

Notes

Adjust the sweetness to suit your taste.
If using the sauce for a savoury dish, you could replace the water in the recipe with red wine.
