This easy blackberry sauce takes just minutes to make, and is ideal for pancakes, ice cream and other puddings, as well as savoury recipes. Use fresh or frozen fruit - no need to defrost!
Blackberry sauce is an ideal way to add extra fruit and flavour to your dessert or breakfast. Blackberries are also a good complement to rich meats such as duck, and this sauce is no exception.
Like most berries, blackberries are very nutritious. They are packed with fibre, and high in vitamin C. They are also low in carb, calories and fat. This healthy sauce is sweetened with just a little honey and thickened with chia seed.
Ingredients
There's just 4 ingredients for this quick fruit sauce recipe, and one of those is optional!
Blackberries. You can use fresh or frozen fruit. I used wild blackberries (brambles) but you can also use cultivated blackberries which tend to be a lot larger. Most supermarkets now sell frozen blackberries throughout the year.
Honey. As blackberries are quite tart, there's a little honey in the recipe to balance the flavour. If you prefer, you could use sugar or maple syrup. Adjust the sweetness to suit your taste. If your blackberries are quite sweet, you may not need any sweetener at all.
Lemon juice. This is optional, but a small squeeze of lemon juice enhances the blackberry flavour.
Chia seed. This is the magic ingredient which will thicken the sauce. Chia seeds are so easy to use. You can add them to hot or cold liquids, and they'll thicken up in just 5 minutes. And as blackberries are packed with seeds anyway, you won't even notice the texture of them in this healthy sauce. Chia seeds are also very nutritious. They are a good source of omega 3, B vitamins, key minerals and fibre.
Chia seed can also be used to make a quick jam or these healthy chia flapjacks.
How to make easy blackberry sauce
Put the blackberries and 2 tablespoons of water in a saucepan, and place over a medium heat. Cook for 5 minutes until the juices start to run. If you're starting with frozen fruit, you might need to cook the blackberries for a couple of minutes extra.
Remove from the heat and add the lemon juice, honey and chia seed. Stir well.
The chia seeds will thicken the sauce in about 5 minutes. If you want a slightly thicker sauce, add a little more chia seed, but make sure you have allowed the sauce to thicken before you add extra. You can also lightly mash some of the fruit if you like.
Serving and storage
This healthy blackberry sauce is delicious for breakfast or dessert. Try it with some of these breakfast recipes. These healthy oatmeal crepes and blackberry sauce go very well together!

The sauce will store in the fridge for 3 or 4 days. You can also freeze any leftovers.

- 250 g blackberries fresh or frozen
- 2 tablespoon water
- 2 teaspoon honey or sugar or maple syrup
- 1 tablespoon chia seed
- squeeze lemon juice
Instructions
