Easy Blackberry Sauce

This easy blackberry sauce takes just minutes to make, and is a healthy topping for pancakes, ice cream, cheesecake and other puddings, as well as savoury recipes. Make this fruit sauce with fresh blackberries or use frozen fruit - no need to defrost!

Ingredients
  

  • 250 g blackberries fresh or frozen
  • 2 tablespoon water
  • 2 teaspoon honey or sugar or maple syrup
  • 1 tablespoon chia seed
  • squeeze lemon juice

Instructions
 

  • Add the blackberries and 2 tablespoons of water to a pan and place on a medium heat. Cook gently for 5 minutes until the juices are running. (If you are using frozen fruit, you may need a minute or two longer.)
  • Remove from the heat. Stir in the honey, lemon juice and chia seed. Leave to thicken for 5 minutes. If you want, you can lightly mash the berries.

Notes

Adjust the sweetness to suit your taste.
If using the sauce for a savoury dish, you could replace the water in the recipe with red wine.
