These little healthy stollen bites have all the best bits of a stollen: a rich marzipan flavour, dried fruits and Christmas spices. They are ready to eat in 15 minutes and are made with just a few wholesome ingredients and no refined sugar.

Ingredients
Ground almonds. Healthy almonds form the base of these little stollen bites. There's no flour and no yeast in the recipe.
I bought ready-ground almonds. If you'd prefer to grind the nuts yourself, make sure they are finely ground for the best texture.
Honey. Use either set or runny honey. If you want vegan stollen bites, replace the honey with maple syrup.
Almond extract. This is optional but very much recommended as it gives the stollen bites their distinctive marzipan flavour.
Dried fruit. I used mixed dried fruit with currants, raisins, sultanas and dried mixed peel. You could also add fruits such as dried cranberries if preferred.
Orange or satsuma - you'll just need a little of the zest from this.
Ground cinnamon. Feel free to switch in your favourite spices in the recipe. As well as the cinnamon you could add a pinch of allspice, nutmeg or ground cardamom. Or use mixed spice instead.
If you like the flavour of almonds, you might also like this healthy marzipan. You can use it for decorations or sweets.
How to make healthy stollen bites
Roughly chop the dried fruit into pieces about the size of a small currant. I find it easiest to spread the fruit out on a board and chop it with a large sharp knife.
It's not essential to chop the fruit, but I think it makes the stollen bites a little nicer:)
Heat the honey in a pan over a low heat until it is melted and goes very runny. Remove from the heat immediately.
Stir in the orange zest, spice and almond extract.
Add the ground almonds and dried fruit and mix well. Squish the mixture firmly with the back of a spoon to ensure that all of the honey is mixed into the ground nuts.
When the mixture is cool enough to handle, shape into little stollen bites. Roll teaspoons of the mixture into a ball, and then squeeze into a log shape. Press lightly to flatten the top. You can use a fork to flatten the top if you want a slight pattern.
I made 18 stollen bites from this quantity of mixture.
Serving and storage
Healthy stollen bites make a delicious mini dessert. Why not make a festive selection and serve them with healthy mince pies, date truffles and juicy tangerines?
Alternatively, just enjoy them with coffee!
Store healthy stollen bites in an airtight container. They can be kept in a cool place for up to 2 weeks.
They can also be frozen. Wrap well and freeze for up to 3 months. Defrost at room temperature.

Healthy Stollen Bites
Ingredients
- 100 g ground almonds
- 100 ml honey
- ¼ teaspoon almond extract
- 100 g mixed dried fruit
- ¼ teaspoon orange zest
- ½ teaspoon ground cinnamon
Instructions
- Chop the dried fruit. Spread the fruit on a board and chop it several times with a sharp knife so most pieces are about the size of a small currant.
- Melt the honey in a pan over a gentle heat. Remove from the heat as soon as it has melted.
- Stir in the orange zest, cinnamon and almond extract.
- Mix in the ground almonds and mixed dried fruit. Stir well to ensure all the ingredients are thoroughly mixed.
- When the mixture is cool enough to handle, shape into individual portions. Take a teaspoon of the mixture and roll into a ball. Squeeze slightly into a log shape and flatten a little. If you want you can flatten the mixture with a fork to leave a faint pattern.
Notes
- Add extra spices if desired. A pinch of allspice or ground cardamom both go well. Alternatively, you can use mixed ground spice.
- I used a bag of mixed dried fruit which included dried peel for a citrus tang. You could also make up your own mix and include Christmassy fruits such as dried cranberries.

Thank you for this very tasty recipe Wendy! Everyone loved these.
However when I made them they were very sticky so I added more ground almonds which helped although they were still on the sticky side. I followed the recipe but next time I make them I may put less honey in.

Thanks Lucy, I'm glad the stollen bites were a hit. I find the mixture gets less sticky as it cools, but if you can get away with a little less honey that's great.
