These little healthy stollen bites have all the best bits of a stollen: a rich marzipan flavour, dried fruits and Christmas spices. They are ready to eat in 15 minutes and are made with just a few wholesome ingredients and no refined sugar.
Chop the dried fruit. Spread the fruit on a board and chop it several times with a sharp knife so most pieces are about the size of a small currant.
Melt the honey in a pan over a gentle heat. Remove from the heat as soon as it has melted.
Stir in the orange zest, cinnamon and almond extract.
Mix in the ground almonds and mixed dried fruit. Stir well to ensure all the ingredients are thoroughly mixed.
When the mixture is cool enough to handle, shape into individual portions. Take a teaspoon of the mixture and roll into a ball. Squeeze slightly into a log shape and flatten a little. If you want you can flatten the mixture with a fork to leave a faint pattern.
Notes
Add extra spices if desired. A pinch of allspice or ground cardamom both go well. Alternatively, you can use mixed ground spice.
I used a bag of mixed dried fruit which included dried peel for a citrus tang. You could also make up your own mix and include Christmassy fruits such as dried cranberries.
