Healthy Stollen Bites

These little healthy stollen bites have all the best bits of a stollen: a rich marzipan flavour, dried fruits and Christmas spices. They are ready to eat in 15 minutes and are made with just a few wholesome ingredients and no refined sugar.

Ingredients
  

  • 100 g ground almonds
  • 100 ml honey
  • ¼ teaspoon almond extract
  • 100 g mixed dried fruit
  • ¼ teaspoon orange zest
  • ½ teaspoon ground cinnamon

Instructions
 

  • Chop the dried fruit. Spread the fruit on a board and chop it several times with a sharp knife so most pieces are about the size of a small currant.
  • Melt the honey in a pan over a gentle heat. Remove from the heat as soon as it has melted.
  • Stir in the orange zest, cinnamon and almond extract.
  • Mix in the ground almonds and mixed dried fruit. Stir well to ensure all the ingredients are thoroughly mixed.
  • When the mixture is cool enough to handle, shape into individual portions. Take a teaspoon of the mixture and roll into a ball. Squeeze slightly into a log shape and flatten a little. If you want you can flatten the mixture with a fork to leave a faint pattern.

Notes

  • Add extra spices if desired. A pinch of allspice or ground cardamom both go well. Alternatively, you can use mixed ground spice.
  • I used a bag of mixed dried fruit which included dried peel for a citrus tang. You could also make up your own mix and include Christmassy fruits such as dried cranberries.
