Ingredients
You'll just need 3 ingredients to make these chocolate-covered nut clusters.
Dark chocolate. I prefer to use a bar of chocolate rather than chocolate chips as it's easier to buy good quality chocolate in this format.
A good quality dark chocolate is low in sugar, making these chocolate nut clusters a healthy low carb treat.
Good quality dark chocolate is also naturally vegan and dairy free, but check the label if that is important.
Nuts. You can use any type of nuts so long as they are unsalted, and I think all nuts go well with chocolate. They can be roasted or unroasted.
I used mixed nuts to add a variety of flavours and nutrients, but you could also make chocolate almond clusters, or chocolate peanut clusters if you'd prefer one variety of nuts.
Coconut oil. This helps the chocolate to melt and become smooth and silky. You could also use butter if you prefer.
How to make chocolate nut clusters
Melting chocolate is easy, but you do need to follow a few simple rules. Most importantly, the chocolate must not come into direct contact with either heat or water.
The best way to melt chocolate is in a bowl placed over hot water.
You'll need a heatproof bowl which can sit safely on top of a pan, with space for simmering water underneath. It's important that the bowl doesn't touch the water.
Break the chocolate into the bowl and add a teaspoon of coconut oil. The heat of the simmering water will gently melt the chocolate. Remove the chocolate from the heat as soon as it is melted.
Chop the largest nuts into pieces about the size of a peanut. (ie halve the almonds and cut brazil nuts into 3.) You want the nuts to be chunky but large whole nuts can make it difficult to form the nut clusters.
Add the nuts to the melted chocolate and mix well so they are thoroughly covered.
Line a baking tray with baking paper.
Add teaspoons of the mixture to form the nut clusters. You can neaten them a little with the spoon and your fingers, but they are supposed to look quite rustic.
Pop the tray into the fridge for the chocolate to set.
Serving and storage
Enjoy these healthy chocolate nut clusters whenever you fancy a chocolatey treat! They are delicious with a cup of coffee, and work perfectly as a mini dessert.
Chocolate nut clusters also make a lovely homemade edible gift.
You could also serve them as part of a festive dessert platter with some mini stollen and healthy mince pies.
Store dark chocolate nut clusters at a cool temperature, either in the fridge or in a cool room. They'll keep in an airtight container for up to 2 weeks - although I bet they won't last that long;). They also freeze well.

Chocolate Nut Clusters
Equipment
- saucepan
- heatproof bowl to fit on top of saucepan
- baking sheet
- baking paper
Ingredients
- 150 g dark chocolate
- 150 g unsalted nuts mixed or single variety
- 1 teaspoon coconut oil or butter
Instructions
- Add a couple of inches of water to a pan and bring up to a gentle simmer. Place a heatproof bowl on top of the pan. The water should not touch the bottom of the bowl.
- Break the chocolate into the bowl and add the coconut oil. Melt the chocolate slowly over the heat of the simmering water. Remove from the heat as soon as melted.
- Chop the nuts into large pieces about the size of a peanut.
- Add the nuts to the melted chocolate and stir thoroughly so that all the nuts are fully covered in chocolate.
- Place a sheet of baking paper on a baking tray.
- Place teaspoonfuls of the chocolate nut clusters onto the lined baking tray. If necessary neaten them up with the spoon and your fingers.
- Pop the nut clusters into the fridge to set.
