This coronation turkey is an easy, healthy recipe for leftover cooked turkey. Enjoy it as a coronation turkey salad, or use it as a tasty filling for festive sandwiches.

What you'll love about the recipe

  • Quick to make, this easy coronation turkey recipe is ready to eat in 10 minutes. It can also be prepped ahead of time if that is more convenient.
  • An ideal recipe for leftover cooked turkey. The mild curry flavour rings the changes for Christmas and Thanksgiving leftovers!

  • Gluten-free, with plenty of protein. You can also make a dairy-free coronation turkey if needed

Ingredients

Cooked turkey, yogurt, mayonnaise, mango chutney, curry powder, optional sultanas.

Cooked turkey. I usually use turkey breast, but you could use a mixture of breast and thigh meat if you prefer.

You might also like this delicious turkey cobbler recipe if you've got a lot of leftover turkey.

Yogurt - you'll need a plain, natural yogurt to make the light coronation sauce. You can use either full fat or fat free. Use a dairy-free yogurt if needed.

Mayonnaise. I've included a little mayonnaise to the dressing for the extra flavour and seasoning it adds. Use low fat or full fat as preferred. If you'd like a mayo-free coronation sauce, omit the mayonnaise and add extra yogurt and seasoning.

Mango chutney adds a mild, fruity tang to the sauce. I prefer to use refined sugar free mango chutney, but use whichever you prefer.

Curry powder adds the classic curry flavour to coronation turkey. I use a mild blend but you can use a stronger curry powder or make your own blend of ground spices.

Sultanas (optional). I like the hint of sweetness from the sultanas but you can omit them from the recipe. You could also add some chunks of chopped fresh mango.

How to make coronation turkey

Cut the cooked turkey into bite-sized chunks and remove any skin or bones.

In a serving bowl, mix the mayonnaise and yogurt. Stir in the mango chutney and curry powder and mix well.

Check for seasoning and add a little salt and pepper if needed.

Add the cooked turkey and sultanas (if using) and mix together.

Either serve immediately or chill until ready to serve.

Serving and storage

This healthy coronation turkey can be stored in the fridge for up to 2 days. However, do not store the cooked turkey for more than a total of 3 days from when it was first cooked.

It can't be frozen as the mayonnaise and yogurt dressing may split, but you can freeze the cooked meat to use in the recipe at a later date.

Curried turkey salad goes perfectly with these easy flatbreads or as a filling for baked sweet potatoes. You can also make a classic coronation turkey sandwich for a Boxing Day lunch!

Ingredients
  

  • 400 g cooked turkey
  • 4 tablespoon natural yogurt full fat or fat free
  • 2 tablespoon mayonnaise full fat or reduced free
  • 2 tablespoon mango chutney
  • 1 teaspoon mild curry powder
  • 2 tablespoon sultanas optional

Instructions
 

  • Cut the cooked turkey into bite-sized pieces, removing any skin and bones.
  • Add the yogurt and mayonnaise to a serving bowl and stir. Add the mango chutney and curry powder and mix well. Taste and add extra seasoning if necessary.
  • Stir in the sultanas and cooked chopped turkey. Serve chilled.

Notes

  • For a dairy-free coronation turkey recipe, use dairy-free yogurt
  • I like to use sugar free mango chutney, but use whichever you prefer
  • If preferred omit the sultanas. They can also be replaced with other dried fruit or a little chopped fresh mango
  • Coronation turkey can be prepared in advance and stored in the fridge for up to 2 days. Do not store cooked turkey for more than a total of 3 days from when it was first cooked
