This coronation turkey is an easy, healthy recipe for leftover cooked turkey. Enjoy it as a coronation turkey salad, or use it as a filling for festive sandwiches.

Ingredients
  

  • 400 g cooked turkey
  • 4 tablespoon natural yogurt full fat or fat free
  • 2 tablespoon mayonnaise full fat or reduced free
  • 2 tablespoon mango chutney
  • 1 teaspoon mild curry powder
  • 2 tablespoon sultanas optional

Instructions
 

  • Cut the cooked turkey into bite-sized pieces, removing any skin and bones.
  • Add the yogurt and mayonnaise to a serving bowl and stir. Add the mango chutney and curry powder and mix well. Taste and add extra seasoning if necessary.
  • Stir in the sultanas and cooked chopped turkey. Serve chilled.

Notes

  • For a dairy-free coronation turkey recipe, use dairy-free yogurt
  • I like to use sugar free mango chutney, but use whichever you prefer
  • If preferred omit the sultanas. They can also be replaced with other dried fruit or a little chopped fresh mango
  • Coronation turkey can be prepared in advance and stored in the fridge for up to 2 days. Do not store cooked turkey for more than a total of 3 days from when it was first cooked
