This apple and celery soup is an easy to make, healthy soup recipe. Apples and celery are a perfect pairing (think of Waldorf salad!), with the apples lending a sweetness to the savoury tang of the celery. Celery is a really nutritious vegetable, and this delicious soup is a great way to include a generous portion in your diet.

Ingredients
Celery. You'll need a small head of celery. This crispy, crunchy vegetable stores really well and is generally available all year round. (If you've got a little left over, eat it raw with some of this quick 2 ingredient hummus.)
Apples add sweetness which balances the flavour of the soup. Use dessert apples which are a little sweeter than cooking apples. For a smooth textured soup, peel the apples before roughly chopping them (unless you are blitzing it with a high powered blender which will easily break them down).
Onion adds a good depth of flavour. I used ordinary brown onions. You can use red onions if you prefer, but the soup will be slightly tinged in colour and look a little more brownish.
Potato helps to thicken the soup and give it a good texture. Most potatoes I buy are are very thin skinned, so I don't worry about peeling them.
Garlic and thyme both add a good flavour. Use extra garlic if you like the flavour. You can use either fresh or dried thyme.
Stock. For a vegan apple and celery soup, use a vegetable stock (I used a stock cube). Otherwise you could also use chicken stock.
You'll also need a little olive oil or another healthy cooking oil.
Optional ingredients
Ginger goes well with celery and apple, so if you like, omit the thyme and add a little freshly grated ginger. Or spice it up a little with a teaspoon of curry powder.
If you want, you can also replace 100ml of the stock with milk for a creamier tasting soup.
How to make healthy apple and celery soup
Heat a large pan over a medium heat, add the olive oil and brown the chopped onions for 5 minutes until just starting to caramelize and soften.
Add the prepared apple, celery, potato, garlic, thyme and stock. Cover and bring the soup up to the boil.
Simmer gently for 20 minutes until the vegetables are soft.
Blitz to a smooth texture with an immersion blender. Or transfer to a blender or food processor and blitz until smooth.
Taste the soup and add salt and pepper if needed (it may already have enough seasoning from the stock.)
Serving and storage
Serve the soup hot. I like to add a drizzle of olive oil to the bowl. You could also add a few nuts or seeds for some extra crunch. Walnuts go especially well as do crispy chickpea snacks.

Store apple and celery soup in an airtight container in the fridge for up to 3 days. It also freezes well.
Frequently asked questions
No, celery does not need peeling before you add it to soup. Just trim the top and base and roughly chop the stems. You can also include any leaves in the soup if you like.
Celery is a very healthy vegetable. However, some soup recipes can have a lot of butter and cream added which makes them high in saturated fat. This healthy celery and apple soup recipe just includes veggies, fruit, herbs and a little olive oil.
Although celery and celeriac are part of the same species, they are quite different vegetables. Celeriac is a bulbous pale coloured root vegetable that looks rather like a swede. It is sometimes known as celery root and does have some of the flavour of celery.

Apple and Celery Soup
Equipment
- immersion blender or food processor
Ingredients
- 1 onion peeled and chopped
- 1 potato medium, cut into 1cm dice
- 2 apples peeled, cored and roughly slices
- 1 head celery roughly chopped
- 1 clove garlic peeled and finely chopped
- 1 teaspoon thyme fresh or dried
- 1 tablespoon olive oil
- 750 ml vegetable stock
Instructions
- Heat a large pan over a medium heat and add the olive oil. Fry the onions and garlic for 5 minutes until just starting to brown.
- Add the prepared potato, apple, celery, thyme and stock. Cover the pan and bring up to the boil.
- Simmer for 20 minutes. The vegetables should be tender to the point of a knife.
- Blitz the soup with an immersion blender until smooth. You could also transfer the soup to a food processor to blend if you prefer.
- Taste and add further seasoning if preferred (it may be seasoned enough from the stock).
Notes
- For a creamier apple and celery soup, replace 100ml of the stock with milk.
- If you prefer, omit the thyme and add some freshly grated ginger or a teaspoon of curry powder.
