Apricot Energy Balls

These apricot energy balls are made from dried apricots and almonds. They are a healthy balanced snack, ideal for lunchboxes, travelling and after the gym. Healthy apricot bites are naturally sweetened with dried fruit and a little honey and they taste delicious.

Ingredients

Dried apricots, ground almonds, chia seeds, honey.

Pitted dried apricots. Semi-hydrated apricots are ideal for this recipe as they'll break down more easily. Organic dried apricots are lovely, but your energy balls will be more brown than orange.

Ground almonds (almond meal). These healthy nuts are a good source of vitamin E. If you've got a high-powered blender you could use whole almonds and grind them down in the recipe.

Honey or maple syrup. A couple of tablespoons of honey provides extra sweetness and sticking power. For vegan apricot energy balls, use maple syrup.

Chia seeds. I've included chia seed in these apricot energy balls as they are a great source of nutrients, healthy fats, fibre and protein. Use white or black chia seeds, or omit them if you prefer.

You can use your chia seeds up in these chia flapjacks, or chia jam.

Optional ingredients and variations

You can also add a few drops of almond extract to increase the almond flavour. (If you are a marzipan lover, try this honey marzipan recipe!)

Or use vanilla extract if you prefer.

A pinch of ground cinnamon will also go well with the flavour of apricots.

Almonds can be switched to other nuts if you prefer such as cashews or walnuts. You'll need a powerful processor/blender if you want to use whole nuts.

How to make apricot energy balls

Chop the dried apricots into small pieces and add to the food processor or blender. Add the honey and chia seeds.

Blitz until the apricots are broken down into a puree.

Pureed apricots with chia seeds.

Add the almonds and blitz again until smooth. You might need to scrape down the sides of the food processor and pulse again.

Remove the mixture from the food processor and divide into 12 pieces. Roll each piece into a ball with your hands.

Recipe tips

If your dried apricots are quite hard and dry, you can soak them first. Just pop the chopped apricots in a heat proof jug and pour over boiling water. Leave for about 10 minutes and drain well before continuing with the recipe.

If you want you can add a decorative coating to your apricot energy balls. Use either ground almonds or shredded coconut.

Serving and storage

Enjoy an apricot energy ball whenever you fancy! They are ideal post-workout after the gym or as an afternoon pick-me-up. They are also a delicious healthy sweet treat after lunch.

You can store dried apricot balls in an airtight container for up to a week, or pop them in the freezer.

Equipment

  • small food processor or blender

Ingredients
  

  • 100 g dried apricots chopped
  • 90 g ground almonds
  • 2 tablespoon honey or maple syrup
  • 25 g chia seeds

Instructions
 

  • Added the chopped apricots, chia seeds and honey to the food processor or blender. Blitz until a rough puree forms.
  • Add the ground almonds and blitz again until the mixture comes together. If necessary, scrape down the sides of the blender and blitz again until fairly smooth.
  • Divide the mixture into 12 pieces and roll into balls.

Notes

  • If you want to add a decorative coating to the apricot balls, you can use either ground almonds or desiccated coconut if you prefer.
  • If you are using a high-powered blender, you could use whole almonds in place of ground almonds.
  • If your apricots are quite hard and dry, you can soak them in boiling water for a few minutes. Discard the soaking liquid.
