These healthy apple crumble slices are delicious oat bars with a thick layer of cooked apple through the middle. There's no refined sugar and no flour in the recipe, making them a healthy snacking option.

You can also make a similar style of oat bars with a layer of dates or a layer of rhubarb.

Ingredients

There are just 5 everyday ingredients in these delicious healthy apple crumble slices.

Oats, honey, butter, apples, cinnamon.

Oats. Use porridge or rolled oats for the best texture. For gluten free apple crumble slices, make sure that you use certified gluten free oats

Butter - or use a vegan dairy-free alternative if preferred.

Honey adds natural sweetness as there's no refined sugar in the recipe

Apples. A nice sweet dessert apple is ideal.

Cinnamon is the perfect partner for apples. I used ground cinnamon, but you can use half a stick of cinnamon if you prefer.

How to make healthy apple crumble slices

Preheat the oven to 170 degrees (150 fan, 340°F). Line a 1lb (450g) loaf tin (approximately 20 x 10cm) with baking paper.

Dice the apples (no need to peel) and add to a pan with a tablespoon of water and the cinnamon. Place the pan on a medium heat and simmer gently until the apples are soft but not completely mushy. You might need to add a splash more water to stop them burning onto the bottom of the pan.

Remove from the heat and drain off any excess liquid.

Whilst the apples are cooking, melt the butter and honey in a pan. Remove from the heat as soon as it is melted and stir in the oats. Mix well to ensure all the oats are coated.

Spoon just over half of the oat mixture into the lined loaf tin. Spread over the base and press down firmly with the back of a spoon. Make sure you press the mixture down into the corners.

Spoon on the apple mixture and spread it out evenly.

Then add the remaining oat mixture. Press down as much as you can without the apple squeezing out.

Bake in a preheated oven for 20 minutes until golden and set.

Leave to cool in the tin. Once cool, remove and cut into 6 bars.

Cinnamon and Kale recipe tips

  • You can use cooking apples if you prefer. You might need a little extra honey to sweeten them.
  • To double the recipe, use an 8 x 8 inch (20 cm square) baking tin. The cooking time will remain the same.

Serving and storage

Healthy apple crumble bars are a delicious snacking option at any time of day. They are perfect for lunch boxes.

Since they are made with fresh apple, it's best to store them in the fridge. They'll keep for 3 or 4 days in an airtight container.

You can also freeze apple crumble bars. Make sure they are well wrapped.

Ingredients
 
 

  • 2 dessert apples
  • ½ teaspoon ground cinnamon
  • 120 g porridge oats
  • 50 g butter
  • 50 g honey

Instructions
 

  • Preheat the oven to 170 degrees (150 fan oven, 340°F). Line a 1lb loaf tin with baking paper.
  • Core and dice the apples and add to a pan with the cinnamon and a tablespoon of water. Place on a medium heat and simmer gently, adding a splash more water if necessary to prevent them from burning onto the bottom of the pan. Cook until soft but not mushy. Drain away any excess liquid.
  • Melt the honey and butter in another pan over a low heat. Once melted, remove from the heat and stir in oats. Mix thoroughly.
  • Add just over half of the oat mixture to the lined baking tin. Press the mixture down firmly with the back of a spoon, ensuring that it is firmly pressed into the corners of the tin.
  • Spread the cooked apple mixture evenly over the oats.
  • Add the remaining oat mixture evenly to the top. Press down as much as you can without the apple squeezing out.
  • Bake in a preheated oven for 20 minutes until golden and set. Leave to cool in the tin, then remove and cut into 6 bars.

Notes

  • If you'd prefer to use cooking apples, you might need a little extra honey to sweeten them.
  • To double the recipe, use an 8 x 8 inch (20 cm square) baking tin. The cooking time will remain the same.
