These healthy apple crumble slices are delicious oat bars with a thick layer of cooked apple through the middle. There's no refined sugar and no flour in the recipe, making them a healthy snacking option.
Preheat the oven to 170 degrees (150 fan oven, 340°F). Line a 1lb loaf tin with baking paper.
Core and dice the apples and add to a pan with the cinnamon and a tablespoon of water. Place on a medium heat and simmer gently, adding a splash more water if necessary to prevent them from burning onto the bottom of the pan. Cook until soft but not mushy. Drain away any excess liquid.
Melt the honey and butter in another pan over a low heat. Once melted, remove from the heat and stir in oats. Mix thoroughly.
Add just over half of the oat mixture to the lined baking tin. Press the mixture down firmly with the back of a spoon, ensuring that it is firmly pressed into the corners of the tin.
Spread the cooked apple mixture evenly over the oats.
Add the remaining oat mixture evenly to the top. Press down as much as you can without the apple squeezing out.
Bake in a preheated oven for 20 minutes until golden and set. Leave to cool in the tin, then remove and cut into 6 bars.
Notes
If you'd prefer to use cooking apples, you might need a little extra honey to sweeten them.
To double the recipe, use an 8 x 8 inch (20 cm square) baking tin. The cooking time will remain the same.
