Cottage cheese chocolate pudding is a healthy but indulgent dessert or snack made with blended cottage cheese. Rather like a chocolate mousse, it's high protein and low calorie.

Ingredients

Cottage cheese. Any type of unflavoured cottage cheese can be used to make this healthy but creamy cottage cheese chocolate mousse. I used a fat free variety, but use whichever you prefer.
Cocoa powder. Make sure you use unsweetened cocoa powder not drinking chocolate which contains a lot of added sugar.
Honey. You'll need to add a little sweetness to turn this cottage cheese chocolate pudding into dessert and balance the natural bitterness of the cocoa. I used honey as it's less refined and a little goes a long way. You could also use maple syrup or an alternative liquid sweetener.
Vanilla extract. This is optional in the recipe, but it does enhance the chocolate flavour and add a little more sweetness. Alternatively, try one of the following substitutions
- A generous pinch of cinnamon powder
- A teaspoon of powdered coffee for a delicious healthy mocha flavoured dessert
- A little grated orange zest for a chocolate and orange cottage cheese mousse
- A few drops of almond extract
How to make cottage cheese chocolate pudding
You'll need a blender or a food processor to make this dessert. I prefer to use an immersion or stick blender and a jug as it makes the washing up easier.

Simply add all of the ingredients to the blender and blitz until silky smooth and creamy. You might need to scrape down the sides of the blender and re-blend to ensure that the texture is completely smooth and there are no grainy bits.

Transfer the mixture into small serving bowls or glasses.

Serving and storage
Enjoy this healthy cottage cheese chocolate pudding as a high protein dessert or snack. I like to add a handful of berries to make it even more nutritious and add plenty of fibre.
You could also add some chopped nuts or grated dark chocolate for extra texture.

Cottage Cheese Chocolate Pudding
Equipment
- Blender or food processor
Ingredients
- 250 g cottage cheese
- 2 tablespoon cocoa powder
- 2 tablespoon honey
- 1 teaspoon vanilla
Instructions
- Add the cottage cheese, cocoa powder, honey and vanilla, if using, to the blender or food processor.250 g cottage cheese, 2 tablespoon cocoa powder, 2 tablespoon honey, 1 teaspoon vanilla
- Blend until thoroughly mixed and silky smooth. You want to ensure that all of the graininess of the cottage cheese is removed, so if necessary, scrape down and re-process.
- Spoon into serving bowls. Either serve immediately, or refrigerate for up to 3 days.
