Healthy chicken tray bake is a super simple recipe. You can put it together in a few minutes, and the oven does the rest of the work. And it's packed with healthy veg.
You'll need chicken thighs with the bone in for this recipe. Chicken breasts tend to dry out very quickly if you bake them uncovered in the oven. Chicken thighs, on the other hand, will stay juicy and moist, with a delicious crispy skin. If you have medical reasons for needing a low fat diet you might need to remove the skin but otherwise enjoy it! Cooking the chicken on the bone adds more flavour and keeps the meat more moist. Allow either one large or two small chicken thighs per person.
Vegetables in your healthy chicken tray bake
It easy to add lots of veggies to this all-in-one recipe. Here, I've included some starchy veg to make the recipe more filling. Sweet potatoes also add a delicious sweetness, especially when they have started to caramelise in the oven. But you could use white potatoes if you prefer. Carrots are full of flavour when baked like this. Cauliflower and/or broccoli if you prefer will add lots of healthy nutrition. Kale makes a delicious crispy addition, but make sure that you cook this only for the final 10 minutes so that it does not overcook and burn. When you add it to the tray, give it a quick stir so that it gets a thin coating of oil.
In the summer you could add a Mediterranean twist with some whole cherry tomatoes, peppers and courgette.
For a perfect healthy chicken tray bake, make sure that the veggies have some space around them on the tray. If they are too close together, they will release too much moisture and end up steaming and soggy. For 4 people, I would recommend using 2 large baking sheets. The vegetables will shrink down quite a lot as they cook.
In this recipe, I have simply used seasoning and some mixed dried herbs. But you can ramp up the flavour with other herbs and spices as you like. Sprinkle over some curry powder, or add a mix of turmeric and cardamom. Fresh thyme or rosemary, finely chopped, is also lovely.

Healthy Chicken Tray Bake
- 4 large chicken thighs
- 300 g sweet potatoes cut into 2 cm pieces
- 300 g carrots cut into 2 cm pieces
- 300 g cauliflower cut into small florets
- 1 tablespoon olive oil
- salt and pepper to taste
- handful of kale leaves
- Preheat the oven to 180 degrees whilst prepping the veg.
- Divide all of the vegetables except the kale between 2 large baking trays. Drizzle over the oil, and add the chicken thighs. Season well. Bake for 25 mins. Add the kale, and bake for a further 10 minutes.
