What makes these muffins healthy?
Many of my muffins are naturally sweetened with fruit and vegetables such as apples, berries, carrots and sweet potatoes. I use small amounts of honey or maple syrup where needed, but no refined sugar.
They use healthy oils rather than butter, making them dairy-free and much lower in saturated fat.
All of the recipes are made without refined grains, making them higher in fibre. There are plenty of gluten-free options. Flourless, wheat-free oat muffins are made with quick homemade oat flour, and grain-free muffins are made with quinoa or coconut flour. In a couple of recipes, I use spelt flour or wholemeal flour.

I've developed and tested all these recipes myself to cut down on refined sugar and processed ingredients. I make them very regularly, as they are quick and simple to make and taste delicious.
