Apricot Energy Balls

These apricot energy balls are made from dried apricots and almonds. They are a healthy balanced snack, ideal for lunchboxes, travelling and after the gym. Healthy apricot bites are naturally sweetened with dried fruit and a little honey and they taste delicious.

Equipment

  • small food processor or blender

Ingredients
  

  • 100 g dried apricots chopped
  • 90 g ground almonds
  • 2 tablespoon honey or maple syrup
  • 25 g chia seeds

Instructions
 

  • Added the chopped apricots, chia seeds and honey to the food processor or blender. Blitz until a rough puree forms.
  • Add the ground almonds and blitz again until the mixture comes together. If necessary, scrape down the sides of the blender and blitz again until fairly smooth.
  • Divide the mixture into 12 pieces and roll into balls.

Notes

  • If you want to add a decorative coating to the apricot balls, you can use either ground almonds or desiccated coconut if you prefer.
  • If you are using a high-powered blender, you could use whole almonds in place of ground almonds.
  • If your apricots are quite hard and dry, you can soak them in boiling water for a few minutes. Discard the soaking liquid.
