1
onion
peeled and chopped
1
potato
medium, cut into 1cm dice
2
apples
peeled, cored and roughly slices
1
head
celery
roughly chopped
1
clove
garlic
peeled and finely chopped
1
teaspoon
thyme
fresh or dried
1
tablespoon
olive oil
750
ml
vegetable stock
Instructions
Heat a large pan over a medium heat and add the olive oil. Fry the onions and garlic for 5 minutes until just starting to brown.
Add the prepared potato, apple, celery, thyme and stock. Cover the pan and bring up to the boil.
Simmer for 20 minutes. The vegetables should be tender to the point of a knife.
Blitz the soup with an immersion blender until smooth. You could also transfer the soup to a food processor to blend if you prefer.
Taste and add further seasoning if preferred (it may be seasoned enough from the stock).
Notes
For a creamier apple and celery soup, replace 100ml of the stock with milk.
If you prefer, omit the thyme and add some freshly grated ginger or a teaspoon of curry powder.
