Equipment

  • Food processor or blender

Ingredients

  • 4 kiwi fruit
  • 1 tablespoon honey

Instructions

  • Peel and thinly slice the kiwi fruit into 5mm slices.
    4 kiwi fruit
  • Spread the slices onto a baking tray lined with baking paper. Freeze until frozen solid (approximately an hour, but you can leave it in the freezer for longer).
  • Add the frozen kiwi slices to a food processor or blender. Add the honey and blitz. At first, the kiwi fruit will become powdery, but continue to process and it will start to turn creamy. Scrape down the processor as needed.
    1 tablespoon honey
  • Serve immediately.

Notes

  • If you only have a large food processor or blender, you may need to double the recipe quantity so that it blends well.
  • If you want to prep this healthy frozen fruit dessert ahead of time, pop it back in the freezer. Leave to soften out of the freezer for 5 minutes before eating.
  • If you've got lolly moulds, you could also use this recipe to make healthy kiwi fruit lollies or popsicles. Set the kiwi lollies in the freezer for a couple of hours.
