Healthy Turkey Mince Lasagne

Healthy turkey mince lasagne is a lighter version of traditional beef lasagne. It's still deliciously comforting, but with ground turkey instead of beef. A low-fat white sauce and extra spinach and beans make this recipe healthier and lighter.

Ingredients
 
 

  • 1 large onion peeled and finely chopped
  • 1 tablespoon olive oil
  • 1 large carrot grated
  • 500 g minced turkey thigh can also use turkey breast
  • 1 clove garlic peeled and very finely chopped or crushed
  • 400 g tinned tomatoes
  • 2 tablespoon tomato puree
  • 1 tablespoon Worcerstershire sauce
  • 1 teaspoon dried mixed herbs
  • 200 g chopped frozen spinach, or use fresh
  • 400 g tinned haricot beans
  • 75 g mature cheddar, grated
  • 8-10 sheets dried lasagne

Easy white sauce

  • 2 tablespoon cornflour
  • 450 ml milk
  • grated nutmeg to taste
  • salt and pepper

Instructions
 

Healthy turkey bolognese sauce

  • Place a large frying pan over a medium heat. Add the olive oil and fry the onions for 3-4 minutes. Add the turkey and garlic and fry for another few minutes.
    1 large onion, 1 tablespoon olive oil, 500 g minced turkey thigh, 1 clove garlic
  • Add the carrot, tomatoes and puree, Worcestershire sauce and herbs. Cover and simmer gently for 20 minutes.
    1 large carrot, 400 g tinned tomatoes, 2 tablespoon tomato puree, 1 tablespoon Worcerstershire sauce, 1 teaspoon dried mixed herbs
  • Add the spinach and haricot beans and stir to mix. (If you are using frozen spinach you might have to wait a few minutes for the spinach to defrost in the heat of the sauce.)
    200 g chopped frozen spinach, or use fresh, 400 g tinned haricot beans

Easy low fat white sauce

  • Add the cornflour, seasoning and nutmeg to a cold saucepan. Add approx ¾ of the milk and stir thoroughly to mix. Slowly bring to the boil whilst stirring. Once the sauce is thick and smooth, add the remainder of the milk.
    2 tablespoon cornflour, grated nutmeg to taste, salt and pepper, 450 ml milk

Assembly and cooking

  • To assemble the turkey mince lasagne, add half of the bolognese sauce to the dish and smooth it out. Add a single layer of lasagne sheets, followed by just under half of the white sauce. Repeat with the remaining meat, lasagne sheets and white sauce. Ensure that all the pasta sheets are covered by sauce. Sprinkle with the grated cheese.
    8-10 sheets dried lasagne, 75 g mature cheddar, grated
  • Cook at 180 (160 fan) for 35-40 minutes. The cooked lasagne should be golden and bubbling. Serve with a big portion of fresh green salad or vegetables

Notes

  • For a gluten-free turkey lasagne, switch the pasta sheets to gluten-free. Omit the Worcestershire sauce unless it is specified to be gluten-free
  • Use oat milk to make a healthy dairy-free turkey lasagne and omit the cheese, or use a vegan cheese
  • You can make a very low-fat turkey lasagne by using minced turkey breast meat in place of turkey thigh
  • To add more fibre to the recipe, use wholemeal pasta sheets
  • For an extra creamy, saucy lasagne, double the quantity of white sauce
